Deze Marokkaanse couscous mag bij ons zeker 1x per week op tafel komen te staan! Snel, eenvoudig en barstensvol smaak… check, check en nog eens check!

RECEPT voor 6 porties

Ingrediënten:

350 gram couscous, 6 kippendijfiletjes, 2 stuks venkel, 2 paprika’s, 2 kleine venkels, 1 mango, 1 witte ui, 2 teentjes knoflook fijngesneden, 1 rijpe mango, 2 eetlepels garam masala, 1 eetlepel knoflookpoeder, 1 theelepel kippenbouillon, 1 royale eetlepel bloem, olijfolie, zout en peper.

Bereiding:

Voeg aan je couscous een gelijke hoeveelheid kokend water, een scheutje olijfolie en een theelepel kippenbouillon, dek dit af met huishoudfolie en zet apart. Snijd de groenten, ui en knoflook in beetklare grootte, voeg er een scheutje olijfolie aan toe samen met zout en peper en voeg dit aan een voorverwarmde oven van 200 graden toe en laat dit in circa 20 tot 30 minuten zachtjes garen. Ondertussen was je de kipfilet en dep je deze droog met wat keukenpapier. Snijd de kip in blokjes en voeg toe aan een kom, voeg de garam masala, knoflookpoeder, bloem en zout en peper toe en hussel dit goed rond in de kom zodat de kip volledig gecoat is. bak deze vervolgens op middelhoog vuur rondom bruin en gaar in een scheutje olijfolie. Als laatste dien je de mango in kleine blokjes te snijden.

Voeg alle ingrediënten toe aan een grote schaal en hussel om alles goed vermengd te krijgen. Verdeel over de borden en bon appetit!
