RECEPT voor 4 personen
500 – 750 gram gnocchi, handjevol spinazie, 250 gram padddenstoelenmix, 2 eetlepels roomboter, 3 teentjes knoflook, 1 eetlepel citroensap, 1 ui, olijfolie, peper en zout
Snijd je paddenstoelenmix in kleinere stukken en snipper ook je ui, snijd je knoflookteentjes in kleine plakjes. Was je spinazie en laat deze goed uitlekken. Plaats een pan of mediumhoog vuur en smelt een eetlepel boter in een scheutje olijfolie, plaats je gnocchi in de pan en laat deze lichtbruin worden. Verwijder de gnocchi uit de pan en zet apart voor later. In dezelfde pan plaats je weer een eetlepel boter met een scheutje olijfolie, voeg vervolgens je ui toe en fruit deze een aantal minuten. Voeg je paddenstoelenmix toe en fruit ook deze goed aan. Wanneer de paddenstoelen licht binnen te verkleuren voeg je de knoflook toe aan de pan en laat deze geurig worden. Voeg je spinazie toe en je citroensap, peper en zout naar smaak en als allerlaatste je gnocchi. Verdeel over de borden. Wanneer je wat extra wilt toevoegen kun je dit doen met bijvoorbeeld pijnboompitjes of walnoten voor een extra crunch of wat parmezaanse kaas voor een extra zoute bite.
Bereiding zelfgemaakte gnocchi:
1 kilo kruimige aardappelen, 300 gram meel, 1 ei, zeezout
Was 1 kilo aardappel in licht gezouten water en kook tot deze gaar is. Laat even afkoelen, verwijder vervolgens de schil en pureer de aardappels. Voeg de gepureerde aardappelen samen met het meel en het ei. Voor een extra lekkere smaak kun je nu ook gelijk al wat zeezout toevoegen. Kneed van deze ingrediënten een mooi elastisch deeg voor de gnocchi. Mocht het deeg te plakkerig blijven, dan kun je gerust wat extra meel toevoegen. Blijft het meel te droog, maak dan je handen nat met een beetje water en kneed het deeg voor de gnocchi dan rustig verder.
Zodra het gnocchideeg mooi elastisch is, snijd je dit in een aantal delen. De afzonderlijke stukken deeg rol je nu tot een lint met een dikte van 1,5 tot 2 centimeter. Snijd deze linten in stukjes van 2 tot 3 centimeter en maak met een vork een ribbel in de gnocchi. De saus van je gnocchi recept blijft hierdoor beter hechten en dit maakt je gerecht nog lekkerder. Vervolgens dien je de gnocchi te koken in flink gezouten water, gebruik hiervoor een eetlepel zout.
Het koken van de gnocchi gaat doorgaans erg snel. Breng een pan water aan de kook en voeg zodra het kookt je zeezout toe. Doe de gnocchi voorzichtig in de pan, na een paar minuten drijft de gnocchi naar boven en is hij gaar. Verwijder ze uit het water en laat uitlekken.
